Jeanne's recipes : Montmorency cherries Clafoutis

Montmorency is famous for its cherries. You can’t miss these local cherries, if you ever pass by the villages of Soisy-sous-Montmorency and Saint-Prix, where they are still produced nowadays. Their acidulous taste make them perfect for making a clafoutis ! Clafoutis is a cherry flan originally from Limousin. Here’s the recipe : it’s simple, quick to prepare, and delicious !

Ingredients :
400g of Montmorency cherries
100g of flour
60g of sugar
2 eggs
25cl of milk
2 tbsp of kirsch
1 pinch of salt
Instructions :
• Preheat the oven at 180°C
• Generously butter a bakin pan
• Put the cherries in the baking pan (you can stone them or not, whether you prefer)
• In a bowl, stir together the eggs, add the sugar, a part of the flour, the pinch of salt, stir together, add a bit of the milk, stir together, then repeat (flour and milk) until everything is mixed.
• Add the kirsch
• Pour the the mixture on the cherries. The cherries should be almost fully covered by the mixture.
• Put in the oven during 35 minutes.
