Jeanne's recipes : Montmorency cherries Clafoutis




Montmorency is famous for its cherries. You can’t miss these local cherries, if you ever pass by the villages of Soisy-sous-Montmorency and Saint-Prix, where they are still produced nowadays. Their acidulous taste make them perfect for making a clafoutis ! Clafoutis is a cherry flan originally from Limousin. Here’s the recipe : it’s simple, quick to prepare, and delicious !



Ingredients :

400g of Montmorency cherries

100g of flour

60g of sugar

2 eggs

25cl of milk

2 tbsp of kirsch

1 pinch of salt


Instructions :

Preheat the oven at 180°C

Generously butter a bakin pan

Put the cherries in the baking pan (you can stone them or not, whether you prefer)

In a bowl, stir together the eggs, add the sugar, a part of the flour, the pinch of salt, stir together, add a bit of the milk, stir together, then repeat (flour and milk) until everything is mixed.

Add the kirsch

Pour the the mixture on the cherries. The cherries should be almost fully covered by the mixture.

Put in the oven during 35 minutes.
